Occupational Certificate in Catering – Level 2

Modules include:

• Health, safety and food safety practices
• Catering and hospitality industry knowledge
• Professional behaviours and customer service
• Team working and communication
• Sustainability and environmental responsibilities
• Stock control and minimising waste
• Digital technologies used in hospitality
• Food preparation techniques
• Cooking methods and culinary skills
• Menu preparation and service
• Hospitality operations
• Employability and work-related behaviours
• Occupational specialism in Culinary Skills or Hospitality Operations

This is a 2 year course studied September – June, with potential exams/coursework hand in dates/extra sessions in July.

At least four GCSEs at Grade 3 or above, including English language and maths. You can also progress onto this course once you have achieved an appropriate Leve 1 qualification.

Learners who have not achieved Grade 4 or above in GCSE English language and/or maths will have these subjects added to the timetable.

A successful interview and demonstration of interest in the catering and hospitality industry is required.

• Practical observations
• Practical cooking and service assessments
• Synoptic assessments
• Employer-informed projects
• Professional discussions
• Assignments and portfolio evidence
• Knowledge-based assessments

Upon successful completion of this Level 2 qualification, learners can progress onto a Level 3 Catering and Hospitality course. They can also progress into an apprenticeships or into employment.

Learners will be expected to purchase and wear:

• Chef’s jacket
• Chef’s trousers
• Apron
• Safety footwear
• Chef’s hat/skull cap

Learners should also bring a notebook and stationery knife set (subject to department requirements). Information about purchasing will be provided during enrolment.

Tuition fees are free if you are a UK or home-fee status student and aged 16-18 on the 31st August before the start of your course.

Work experience is strongly encouraged as part of the programme to help develop occupational competence and employability skills. Learners may undertake industry placement opportunities with restaurants, hotels, cafes, contract caterers or hospitality venues where available. The qualification is specifically designed to prepare learners for entry into Level 2 occupational roles within the sector.
