Course overview
This course will develop your culinary techniques with a variety of ingredients and learn advanced skills within the kitchen and larder to produce food in a professional environment.
In the Kitchen and Larder route, you will learn how to prepare, cook and finish a range of advanced shellfish, fish, meat, game, poultry, sauce and vegetable dishes.

Catering and Hospitality students will have the opportunity to work in our award winning training restaurant, The Waterside Brasserie. The restaurant is open to the public across the week and all the food is prepared and served by our students in one of our five fully equipped industrial kitchens.
