Overview

This course will develop your culinary techniques with a variety of ingredients and learn advanced skills within the kitchen and larder to produce food in a professional environment. In patisserie & confectionary you will study advanced chocolate work, dough products, petit fours, hot & cold desserts and sugar work.
You will also improve your knowledge of gastronomy, kitchen management and food safety.

Entry requirements

You must have achieved an appropriate Level 2 vocational qualification.

You will be assessed practically by an end exam. Evidence will include a wide range of dishes produced. Theoretical knowledge will be assessed through this process.

University Opportunities: Past students have progressed to study degrees in culinary arts and hospitality management, you can also apply for a higher apprenticeship in hospitality management.
Career Opportunities: Career opportunities include chef, restaurant manager, nutritionist and head caterer.

Tuition fees are free if you are a UK or home- fee status student and aged 16-18 on the 31st August before the start of your course.

If you are aged 19 or over, you may be required to pay fees depending on your residency status, educational background and personal circumstances.
