Overview

This course will develop your culinary techniques with a variety of ingredients and learn advanced skills within the kitchen and larder to produce food in a professional environment.

In the kitchen & larder route, you will learn how to prepare, cook and finish a range of advanced shellfish, fish, meat, game, poultry, sauce and vegetable dishes.

In patisserie & confectionary you will study advanced chocolate work, dough products, petit fours, hot & cold desserts and sugar work.

You will also improve your knowledge of gastronomy, kitchen management and food safety.

Entry requirements

You must have achieved an appropriate Level 2 vocational qualification. School leavers are not able to apply for this course.

You will be assessed by 1 end of year practical synoptic and 1 end of year test.

This qualification will provide you with a range of transferable skills so that you can progress onto a range of our HE courses.

Past students have progressed onto our foundation degree in Culinary Arts. After completing this degree you are well equipped to pursue a career as a chef, restaurant manager, nutritionist and head caterer.

Past students have also progressed onto our foundation degree in Hospitality Management and have then completed the BA (Hons) Hospitality Management top-up degree. After completing this degree you are well equipped to pursue a career in management, catering, the fast food industry, hotel management and event management.

Tuition fees are free if you are a UK or home- fee status student and aged 16-18 on the 31st August before the start of your course.

If you are aged 19 or over, you may be required to pay fees depending on your residency status, educational background and personal circumstances.

Explore Catering & Hospitality

Catering and Hospitality students will have the opportunity to work in our award winning training restaurant, The Waterside Brasserie. The restaurant is open to the public across the week and all the food is prepared and served by our students in one of our five fully equipped industrial kitchens.
